What Stan says will certainly work. However, there is currently a FieldConvert module called removefield (paragraph 5.5.28 of the latest user guide) that allows you to do just that.

I do not think there is (to be corrected), but you can achieve something like that by setting a session file with 0 time steps that would use only selected fields as initial conditions from the file.
